Citrus Pectin Description
In citrus pectin, pectin sometimes undergoes chemical changes through changes in pH and temperature.
Decomposes its long multi-branched polypeptide into smaller, unbranched soluble fibers molecule.
The natural form of citrus pectin is not absorbed by the body and is considered to be a non-digestible soluble dietary fiber. The modified citrus pectin has a lower molecular weight than conventional citrus pectin, mainly linear polygalacturonic acid. Containing galactose residues, if the molecular weight is correct, they are easily handled by the digestive system and absorbed into the blood.
